Do you like strawberry? This berries are so aromatic, so sweet! Then you may also like the tasty Homemade Strawberry Pie with the fresh berries!
I want to share it’s recipe with you, because it is extraordinarily delicious and very easy Strawberry Pie. It’s tender and crumbly, with a lot of juicy strawberry filling, but isn’t raw.
For this pie we will made an easy sand dough with sour cream.
Also, you may cook those pie with any another berries or fruits: blackberry, cherry, apricots or peaches.
Ingredients:For a baking pan 29 cm in diameter:
For the dough:
- 450-550 g of the wheat flour;
- 125 g of butter;
- 100 g of sugar;
- 200 g of the sour cream;
- 2 eggs;
- 0,5 teaspoon of baking soda;
- 0,25 teaspoon of salt.
- 400-500 g of the fresh strawberry;
- 1-2 tablespoons of potato starch;
- 70-100 g of sugar (the sweeter the berry, the less sugar).
- 1 yolk;
- 1 teaspoon of sugar.
Sift the flour into the bowl together with the baking soda. Add the cold cubed butter.
Grind with hands to the crumble.
Then add salt and sugar, eggs and sour cream.
Mix this all and knead the soft dough. If it is sticking to hands, add some flour. If is crumbling - add a little of sour cream.
Put the dough to the fridge at 30 minutes. Meanwhile wash the berries and peel of stalks.
Take out the dough and divide it into 2 parts: ¾ and ¼.
Roll the largest part on the floured baking paper to the circle 0,7-1 cm thick.
Remove it with paper to the baking pan. Remove excess dough with a rolling pin.
Sprinkle the dough with a little of the potato starch. The rest of starch mix with berries.
Fill the base of our pie with strawberry and sprinkle with sugar.
Flatten the smaller part of dough and cut it into strips.
Put the strips on the pie, twisting them like grate.
Grease the grate with yolk use pastry tassel.
In the holes of the grate put a little pieces of butter - then berry juice will not run away during the baking.
You can sprinkle the top of the pie with white or brown sugar to get an delicious crust.
Bake the strawberry pie at 180 C (356 F) during 35-40 minutes. Pierce it with toothpick to know is the pie ready.
Let the pie to cool in the form at 15-20 minutes, because it’s very tender while is hot. Then put strawberry pie to the dish and sprinkle with sugar powder.
Cut the yummy berry pie into pieces.
And decorate with fresh leaves of mint.
