Trick or Treat! Do you want to bake some funny and yummy Halloween cupcakes?
This is recipe of easy and tasty pumpkin cupcakes with chocolate decorating.
You will like decorating of this cakes so much as eating:) It is very interesting and creative process![cut]
- 3 eggs;
- 180 g sugar;
- 150 g pumpkin puree;
- 80 ml sunflower oil;
- 200 g flour;
- 10 g baker powder;
- A pinch of baking soda;
- A pinch of salt;
- 2 tablespoon of semolina;
- 1 tablespoon vanilla sugar;
- 100 g walnuts;
- 100 g chocolate.
Mix the pumpkin puree with vegetable oil.
In other bowl sift the flour with baking powder and soda, add semolina, salt and vanilla sugar. You may use only wheat flour or combinate it with rice, sezam or spelta flour (for example,130 g wheat, 70 g rice). Also it will be fine to add some species^ 1/4 teaspoon of curcuma, jinger, cinnamon.
In the third bowl beat egg with sugar to light foam.
Stir dry ingredients with beated eggs.
Add pumpkin puree.
Mix this all.
Add hulled walnuts and chocolate drops or pieces (50 g). Also you may add to cakes some raisings or other dried fruits.
Also I add 0,5-1 tablespoon of lemon juice. It will react with soda, and cakes will be more fluffy.
Mix and put dough into the forms.
Bake pumpkin cupcakes during 30-35 minutes by 180 C (356 F).
Cakes must become golden-brown, high and dry inside (check by toothpick).
Melt dark or milk chocolate on a water bath.
Let cupcakes cool a little and decorate them with melted chocolate.
