I recently found out the easy and delicious recipe of a fine apple pastry, and I’m delighted with it!

This is Apple pandowdy recipe, so easy and delicious, with crumbly shortcrust pastry and tender apple filling. You will like it together with sponge apple pie!

Also, you may cook pandowdy with another fruits or berries: peaches and blueberry, apricots or plums, but exactly with apples it is the most delicious!

Apple pan dowdy is one of the best recipes with apples. Just do it! :)

It’s handy to make pandowdy in cast iron pan. You can make the filling in it and then bake dessert in the same one.Yields: 8-10
Cook time: preparing 25 minutes, waiting 1 hour, baking 30-40 minutes

Ingredients:
For pan 24 cm in diameter,
For the sandy paste:
- 180 g of wheat flour (or 90 g of wheat flour and 90 g of rice or corn flour);
- 1 tablespoon of sugar;
- A pinch of salt;
- 100 g of cold butter;
- 2-3 tablespoons of ice water.
- 20 g of butter;
- 0,8-1 kg of apples;
- 1 tablespoon of lemon juice;
- 3-4 tablespoons of sugar;
- 1 tablespoon of potato starch;
- ¼ teaspoon of cinnamon;
- A pinch of cloves.
- 1-2 tablespoon of maple syrup;
- 2 tablespoon of white or brown sugar;
- A pinch of cinnamon.
Sift the flour into a bowl, add sugar and salt. If you’ll take wheat flour in half with corn flour, you’ll get more crumbly sandy paste of a pleasant golden color. Rice flour also gives the pastry greater brittleness, because those kinds of flour are gluten free.

Add the cubed cold butter to the dry ingredients and grind all together to the crumbles by hands or food processor.

Add ice water one by one tablespoon and mix paste into a ball.

Then form a disk, wrap in food film and put it to a fridge for 1 hour.
Peel and core apples and cut in cubes. Sprinkle with lemon juice.

Melt butter in the pan on a small heat and add apples.

Stew 3-4 minutes till apples become slightly soft.


Take off stove, add potato starch, sugar and cinnamon and stir carefully.

Roll the dough between two sheets of baking paper.

Cover apples with the dough, sprinkle with maple syrup and sugar with cinnamon.



Put pandowdy into the oven preheated to 200 C (392 F) and bake 25-30 minutes.

Then get it out of the oven and cut the dough into squares.

Return the pan to the oven and cook 15-20 minutes yet, to golden brown crust.

Let the apple pandowdy to cool a little and serve to tea or with ice-cream.
