What Christmas pastry do you prefer? Is it Christmas Cake, Austrian Stollen or Italian Panettone? All this kinds of bakery are very interesting and tasty, but now I want to share with you homemade ginger cookies recipe!

This yummy, aromatic ginger cookies with a lot of different spices are looking very festively and will be a fine gift for children and your friends!

Ingredients:

- 100 g butter
- 100 g sugar
- 100 g liquid honey
- 1 yolk
- 260-290 g flour
- 1 teaspoon ground ginger
- 1 teaspoon ground clove
- 0,5 teaspoon ground cinnamon
- 0,5 teaspoon ground cardamom
- 0,5 teaspoon salt
- 0,5 teaspoon baking soda
- 0,5 teaspoon baking powder
- Juice from 1 lemon
- 200 g sugar powder
You may take molasses instead of honey.
Softened butter whisk or grind with sugar.

Add the yolk and the honey. Stir with spoon.

Sift the flour with spices, soda and baking powder, add salt.

Knead the dough. It must be soft but not sticky. Form a disk and put the dough to a fridge for 1-1,5 hour or for tomorrow.

Preheat the oven to 180 C (356 F).
Divide the dough in 2 parts. One of it roll between two sheets of baking paper to a layer 0,5 cm thick.

Make cookies by different cookie cutters like Christmas trees, bells, deer and horses, even sleigh and bags with gifts!

Place the cookies on the baking tray covered with baking paper, left distance between cookies in 1-2 cm.

Bake ginger cookies during 10-15 minutes – total time depend of your oven. Cookies must become light golden color. If you will bake it longer, it become golden brown and will be harder.

Replace cookies on a table and let them cool. Meanwhile make the sugar lemon icing for decorating. Mix sugar powder with lemon juice to required consistence.

Put the glaze into a pastry bag, cut the corner and draw diverse pattern on the cookies.

Let the icing to freeze, and homemade ginger cookies are ready!
