The Easter is my favorite spring holiday!
It is a Holiday of Sun and Joy, of Spring and new life!
We usually bake a special Easter bakery in Ukraine, that called pasochki. Also I try English Hot Cross Buns, Italian Colomba, Austrian Raindling. The Easter bakery of different countries is all tasty in its own way!
Also there are a lot of recipes of Easter Cookies, such as Kittens, Chickens, Easter Eggs or Easter Bunnies!
Easter Bunny Cookies is an easy recipe, and you will get a lot of cookies to treat your friends.
Your children will be delighted with this funny cookies!
Ingredients:For 60 pieces:
- 180 g butter
- 180 g sugar
- 1 large egg
- 300 g flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- a pinch of vanilla
- some chocolate
- 1/3 teaspoon cinnamon
- 1,5-2 tablespoon brown sugar
Stir or whisk the soft butter with the sugar.
Add an egg and whisk again.
Sift the flour with vanilla and baking powder, add salt and quickly knead the dough.
The shortbread dough doesn`t need long kneading, it`s enough to gather it all into a sphere. If the dough is sticky, you need a little more flour; if it is crumbly, add a teaspoon of cold water or sour cream.
Divide the dough in two parts, form disks and put to the fridge for 1 hour.
Than preheat the oven to 180 C (356 F), roll the dough on floured baking paper to 3-5 mm thick and cut the cookies with cookie cutter bunny.
Cover the baking tray with oiled paper for baking and put the cookies in 1 cm one from one.
Put into the oven and bake for 15-25 minutes, to golden light. Check if the dough became dry with toothpick.
Let the cookies cool a little and decorate it with melted chocolate by drawing eyes and funny brown noses.
Also you may sprinkle the cookies with mix of brown sugar and cinnamon before baking.
Then they will be even more tasty!
You can seat bunnies to a basket, it looks original and fine for an Easter present for a friend!
