Probably, it is the best coffee cake recipe! I have baked it already three times last week and treated friend and colleagues, and all them liked this coffee cake very much! I hope this easy coffee cake recipe will become your favorite too.

It is perfect recipe! The cake is tender as a coffee cloud and very flavorous. It has deep coffee flavor and nice beige color.

You can make the cream cake if add some sour cream and chocolate glaze. It will become even more delicious!

Yields: 8-10

Cook time: preparing 15 minutes, baking 35 minutes.

Ingredients:

  • 2 eggs;
  • 180 g of sugar;
  • 100 ml of buttermilk;
  • 3 teaspoons of instant coffee;
  • 100 g of butter;
  • 150 g of flour;
  • 2,5 teaspoons of baking powder (or 2 teaspoons of baking powder and 1/3 teaspoon of baking soda);
  • A pinch of salt.
For the cream:
  • 3 tablespoons of sour cream;
  • 1 teaspoon of instant coffee.
  • First thing, add the instant coffee to the buttermilk and stir with the spoon until coffee will dissolve.

    Then beat the eggs with sugar a little, during 30-45 seconds on a middle speed.

    Then add soft butter and blend with mixer.

    Sift the flour with baking powder and add salt.

    Stir all together and put the aromatic coffee dough into the baking pan.

    Put the pan into the oven preheated to 180 C (356 F). Bake the coffee cake 30-35 minutes until dry toothpick.

    Let the cake cool during 5-10 minutes, then replace it on the dish.

    Make the coffee cream. Add 1 teaspoon of instant coffee to 3-4 tablespoons of sour cream and stir till coffee’s dissolution. Cover the warm cake with this cream. Also you can divide the cake in two parts and cream it inside, and then cover with chocolate glaze. For the glaze melt 50 g of chocolate with 1-2 tablespoons of milk or butter on a water bath.
